We carry a rotating selection of seasonal coffees, in a variety of roast levels.
Our light roasts are tea-like and light in body. They are vibrant, bright, fruity, juicy, and sweet.
Our medium roasts are rich and roasty, and chocolatey, with little to no char. Chocolate and nut overtones give way to subtle underpinnings of fruit balance. If you add cream, make sure to grind fine.
Our dark roasts are robust and charry, with incredible richness and body. Earthy, deep, and strong, these roasts are intended to be mixed with cream or milk. If you take it black, try increasing your water-to-coffee ratio.
Our in-house espresso blend is excellent as an espresso or a filter coffee. This is our only coffee that includes Java Robusta, a different species of coffee with incredible deep flavors and double the caffeine!

Local delivery provided 5 days a week. If you live in Albuquerque, order before noon Monday thu Friday and receive your order same-day.
Santa Fe and Rio Rancho Deliveries every Thursday. All other NM residents receive free shipping.

a little backstory…
my name is will! I've always enjoyed making things, cooking things, and avidly pursuing the best version of something. in this new era of craft coffee, i've tried so many different roasters, but there was always something left on the table. i took this as a sign to do it myself.
in 2019, after 2 years of home-roasting ½ lb batches for personal use, I took the plunge and got a new Probat roaster. It does 6.5lb batches and is designed to offer the best versatility to roasters that prioritize quality. our little operation turned into a full-fledged roasting company in my hometown of albuquerque, new mexico. our priority will ever-remain to bring you the best possible sourced coffees, roasted at a world-class level.

i saw a big gap in the new craft roasters: no darks! and not really any mediums to speak of, with decaf obviously not done thoughtfully either. here at subterra, we offer distinctly different roasting styles including light, medium, dark, decaf, and more.

every batch is personally tested for quality and perfect freshness. delivered right to your door.
fresh is an understatement. due to the small-batch nature of our roastery, we keep a steady small supply of roasts, and let them properly off-gas before going to you. our coffees keep exceptionally well, typically requiring 1-2 weeks of off-gassing before they begin to peak in freshness and flavor. this is a very detailed and important part of our quality control, we deliver the coffee to you right when it's beginning to peak in flavor. after this point, the coffee stays totally fresh for a month or more.
this guarantees you are drinking the best coffee possible. also why you see air vents on coffee bags. by the time your coffee reaches your doorstep, it’s ready to brew. it’s actually so fresh, that it holds its amazing flavor even longer than you’re normally used to (over a month in an airtight container).
